If past seasons have been any indication, Rian Robertson of Ontario will be returning to the Alex Trebek Stage in some capacity in the winter of 2028. At this point, though, whether that is Champions Wildcard or the Tournament of Champions is still to be seen, as Rian has just three victories. Looking to stop Rian from getting to four victories are Elise Rose of Florida and Alex Kim of Massachusetts.

In the 1960s, the Casa de Fritos restaurant at Disneyland had a problem: they had a surplus of tortillas. The restaurant solved their issue by cutting the tortillas into smaller triangle-shaped pieces, frying them, and seasoning them. When the tortilla chips became a hit at the restaurant, the Doritos brand was born—Doritos being similar-sounding to doradito, Spanish for "little golden thing". The brand, originally produced regionally, was released throughout the United States in 1966. Originally in "Toasted Corn" flavor, taco flavor was introduced in 1967 and nacho cheese in 1972.
Knowing the origin story of Doritos, this was a very straightforward Final Jeopardy clue for me. That being said, it might be more difficult to come up with in 30 seconds for those unfamiliar with the origin story.
